Delivery driving in big cities is just as dangerous as police work.
Only since police work isn’t particularly dangerous, relative to, say, fishing.
Arming untrained civilians usually doesn’t end well. If someone wants my pizza and my money, sure, you can have it; guns typically invite escalation well beyond what the situation warrants, even when trained police are using them.

Millions of untrained, armed civilians
don’t
shoot anyone on a daily basis; hundreds of thousands of crimes are prevented by armed civilians every year without a shot being fired.
As for escalation, well, some thug
threatening life or limb over $20 and a pizza has already done the escalating. They’ve already demonstrated that violence is an acceptable bargaining method for them. No reason to assume that person will let you go unharmed if you hand over your stuff.
